That slow ferment is the quiet secret. It's what gives the dough its faint tang, its bubble, and the charred, blistered bottom you only get from a properly hot oven. What hand-stretching actually involves
When your order lands, our pizza chef pulls a dough ball, dusts it with flour and shapes it by hand on a wooden board. The centre gets pressed flat with the fingertips. The edges get eased outward, leaving a thicker rim that will puff up in the heat. Each base takes 30 to 40 seconds to shape, quick once you've done it a thousand times, and every one is stretched to the exact size the pizza will be served in: 9", 12" or 16".
The result is a base that's thin in the middle and thick at the edge, with the air pockets still intact, ready to hit the oven and bloom into something with real structure.
Why does hand-stretched pizza taste better?
If you've only ever eaten chain pizza or the supermarket kind, the difference is subtle on the first bite and obvious on the second. Hand-stretched, slow-fermented dough gives you:
- A puffy, gently chewy crust, not dense or bread-like.
- Visible char on the bottom, the black-flecked spots where the dough met the hot stone.
- Air pockets in the rim, the cornicione, or as we call it, "the bit you save for last".
- A faint sourdough-style tang, from the long ferment, milder than a proper sourdough but clearly there.
- Genuine crispness, an outer crust that shatters cleanly instead of bending or going floppy in the box.
You can't fake any of that with a frozen base or a pressed disc. The structure has to be built into the dough hours before it reaches the oven, and it has to be handled gently on the way there. That's the whole case for doing it by hand.
